Bigeye scad is consumed worldwide as a delicacy. It is a medium flesh fish, not light but very much milder than most mackerel. The flesh is tender but it holds together well for all methods of cooking.
Latin Name, Selar crumenophthalmus, Bigeye Scad is from the Carangidae family and also known as Purse-eyed Scad and Goggle-eyed Scad. Sizes can vary up to 30cm and weigh up to 230g. Mainly found in tropical regions throughout the world.
Preparation: Can be used in a variety of cooking methods including fried.
Product must be fully cooked prior to consumption.
