One of our less commonly available fish species, Butterfish are delicious to eat. With white, creamy fillets, a medium texture and mild flavour, they can be easily adapted to your favourite cooking method.

The subtle flavour profile means you can enjoy the premium texture of Butterfish fillets with your favourite herbs, spices, and sauces. It is also delicious with a classic batter!

Butterfish have a very clean, delicate flavour, translucent flesh and ability to flake well, the fillets are medium textured, very succulent flesh with high iodine content.  They are found only around the New Zealand coast, and are widespread, feeding on kelp beds over shallow rocky outcrops. They are rarely found at depths greater than 15 metres. 

Preparation: Butterfish is suited to most cooking methods, try it baked, marinated, poached, smoked, grilled or fried.
