The large fillets are known for firm white meat with a mild, sweet taste. You can enjoy Cobia fillets raw as sashimi or ceviche, or they can be baked, fried, grilled, or poached.
Cobia carry some fat within the muscle, which improves flavour and retains tenderness when cooked.
