Groper has a very firm white flesh with few bones and is extremely versatile, wonderful steaks, remaining moist with heavy flakes when cooked.
It is suitable for most cooking methods.
More commonly known as Hapuku here in New Zealand, they belong to the temperate Bass family. Groper or Hapuku are mainly caught near rocky areas in depths of up to 250 metres.
Preparation: Make groper the star of your menu and be careful to preserve its delicate flavour. This fleshy fish is extremely versatile - bake steam, pan fry, poach, smoke or sear on the BBQ.
