Ghost Shark (Pale and Dark) are found throughout New Zealand waters. Also known as Pearl Fish.
Caught year round off the central and southern continental shelf. Ghost Sharks are more abundant in water 100 to 500 metres deep off the west coast of the South Island, and on the Chatham Rise.
School Shark is found among New Zealand's coastal waters particularly in the North Island at depths of up to 200 metres.
School Sharks are more abundant inshore during spring and summer.
Preparation: The texture of shark also makes it a great ingredient for fish cakes, kebabs or fish cakes and even soups. Shark is also excellent for children as there are no bones and can be used to make great fish nuggets.
