Gurnard is succulent, with medium- firm textured fillets, a delicate, slightly sweet and nutty flavour and a low oil content.
Red or Spotted Gurnard are the most common variety of Gurnard found in New Zealand. They are widespread, and usually found on sandy shell seabeds at depths of 10-200 metres.
Preparation: Gurnard is suited to a variety of cooking methods, can be grilled, baked and pan-fried.
Availability: Available year round while stocks last.
