The cheek is fleshy and tender, and being naturally bite-sized is a great centrepoint for a variety of meals and snacks.
The cheeks are the lower part of a hake's chin.
Preparation: Hake cheeks are used in many traditional dishes and are often prepared with some crushed cloves of garlic with parsley and olive oil in a clay casserole, fried lightly without browning and adding salt.
Availability: Available year round while stocks last.
Shelf life: Best consumed on arrival or within 3 days from receiving product if defrosted.
Suggested Wines: Fresh, zesty wines such as Sauvignon Blanc or Pinot Blanc are a safe bet.
