Hake collars are the part of the fish just behind the gills and below the head. It includes the fatty, rich flesh around the pectoral fins. Hake collars are known for their tenderness and flavor.
Preparation: Collars are perfect for grilling. Preheat oven for 30 minutes. Salt heavily the skin side only. Grill with fan on at 200-210C, skin side up in the middle of the oven for approximately 15 minutes. At the end of cooking while the dish is still piping hot add soy sauce to the skin. Collars are also great for smoking.
