Our Hake throats come from New Zealand Hake, usually caught between the Snares and Auckland Islands.

Hake throats come from under the "chin" of the hake, between the jaw. It is heart-shaped, and is soft with a gelatinous texture in the middle.

 

Preparation: Hake cheeks are used in many traditional dishes and are often prepared with some crushed cloves of garlic with parsley and olive oil in a clay casserole, fried lightly without browning and adding salt.

Availability: Available year round while stocks last.

Shelf life: Best consumed on arrival or within 3 days from receiving product if defrosted.

Suggested Wines:  Fresh, zesty wines such as Sauvignon Blanc or Pinot Blanc are a safe bet.
