John Dory is deep sea fish with a slender, oval shaped body. They have a distinctive dark blue spot ringed with white in the centre of each side. This is used as a protective mechanism, flashing an 'evil-eye' if danger approaches.
It is a solitary fish that can be found in a range of habitats, from reefs, to sand, and mud bottoms. Due to their solitary nature, they are often caught in mixed catches of Snapper and Tarakihi.
Preparation: The flesh is pale, with a medium to firm texture. John Dory fillets can be boned very easily.
