Lemon Sole has a delicate, moist, white flesh and works extremely well poached, but will suit many cooking methods.
Lemon Sole are one of the simplest fish to cook, either baked whole or dusted in flour and sealed in a pan with butter and finished in the oven if required. When cooked flesh is delicious and falls of the bone.
Preparation: Like other flounder Lemon Sole is a great fish to cook whole and are suitable for baking, frying, poaching or steaming.
