Meaty, white flesh with a medium to firm texture and a sweet, delicate flavour, you need to experience New Zealand Scampi for yourself to understand why this delicacy is enjoyed around the world. Enjoy them raw as sashimi, or marinate them before baking, grilling, or barbequing.
Preparation: For a simple serving idea, cut the tails in half lengthways with a sharp knife. Make an infused butter with fresh ginger or garlic, lemon or lime zest and spread over the flesh of each tail. Put under the grill flesh side up for about 5mins.
