Marlin flesh is lean and dense, high in protein, and low in fat.
Marlin has a moderately rich flavour, and the texture is firm and meaty, often considered to be more similar to a beef steak, as opposed to the flaky texture of other fish.
Striped Marlin has a mild and delicate oceanic flavour.
Marlin handles hot temperatures well, and doesn't flake apart when cooked. This makes it well suited to grilling, searing, and baking as steaks. It is also well suited to smoking.
Marlin Loins are skin on and bone out. Approximately 1-3kg.
Blast frozen to maintain maximum quality and freshness.
Preparation: It should be cooked until it just starts to flake. Care should be taken not to overcook Marlin. It is suitable fo most cooking methods. Lightly pan-frying works well (cook as per other NZ white fish).
