A traditional long but cool smoking method. This is a skinned & boned product that is best cooked gently to finish.
Preparation: Ideal in fish pies & chowders, or gently poached in milk. Make a sauce from the milk by adding cheese or parsley to serve.

Suggested Wines: Many smoked species are a little drier and need wine pairings that quench them. A Vintage Champagne, Rosé Sparkling Wines, Dry Riesling or a white Pinot Noir will pair well.
