Southern Bluefin Tuna NZ Belly Loins Per 1kg/Fresh
The Belly Loin is cut from the fatty fish that are graded on arrival at Solander.
With rich marbling, this is the most flavoursome and tender flesh of the Southern Bluefin Tuna.
In March, early in the New Zealand Bluefin Season, the fish tend to be leaner, getting fattier as the season progresses.
This Southern Bluefin Tuna has been specifically selected to meet the sashimi grade. This reflects not only the premium quality of the Tuna and its meat, but also of our high standards kept when catching, storing, transporting, and processing the Tuna.
This means that you can expect the most incredible rich flavour, beautiful red/pink colour, and melt-in-your-mouth texture of the best Southern Bluefin Tuna.
Preparation: This belly loin comes with skin on and bone in, therefore some processing is required. Belly Loins are the most prized cut from our fatty fish, so is usually enjoyed raw as sashimi.
Origin: New Zealand
Sustainability: The Solander Group is New Zealand's largest single quota owner and fisher for Southern Bluefin Tuna (NZ Quota Management System code = STN).
Being a migratory specis, Southern Bluefin Tuna fishing must be managed sustainably by a number of Nations. Most importantly Japan whom sole significant consumer of SBT.
New Zealand is a signatory to CCSBT - an arrangement between most SBT fishing countries to maintain and monitor an agreed total catch. New Zealand's current allocation under CCSBT is 400 tonnes (less than 0.05% of the global total) and is managed strictly under New Zealand's own QMS.
Every fish is carefully counted and recorded, including those taken by whales. The majority of fish caught in NZ EEZ are larger, more mature fish.
