A well grilled Tuna collar has a crispy outside and super tasty rich tender meat on the inside.

 

Preparation:  Collars are perfect for grilling.  Preheat oven for 30 minutes. Salt heavily the skin side only. Grill with fan on at 200-210C, skin side up in the middle of the oven for approximately 20 minutes for a large collar.   At the end of cooking while the dish is still piping hot add soy sauce to the skin.  Tuna collars are also great for smoking.

Shelf life: Best consumed on arrival or consume within 3 days of receival.
