The flesh of Trevally is white and firm and of good flavour, with a low oil content and suitable for all cooking methods and also lends itself extremely well to smoking and Raw fish dishes such as Cevichi.

Trevally is a mainly North Island fish frequently occurring in large schools in coastal waters. 

Preparation:  Trevally can be baked, curried, marinated, steamed, poached, smoked or fried.
